कुछ साल पहले लंदन की एक कॉफी दुकान में जब मैंने पहली बार हल्दी दूध को देखा तो मुझे भरोसा नहीं हुआ. मेन्यू में इसे 'गोल्डन मिल्क' नाम दिया गया था.

इसमें बादाम, थोड़ी दालचीनी और काली मिर्च के साथ मिठास के लिए प्राकृतिक एगेव सिरप डाली गई थी.

उसके आगे मैंने पढ़ना बंद कर दिया. इसकी एक वजह शायद यह थी कि मैंने उसकी महंगी क़ीमत देख ली थी. दूसरी वजह, मुझे भारत की हज़ारों दादी मां की मुस्कान याद आ गई थी.

थोड़ी देर के लिए मैं बचपन की यादों में खो गई जब मेरी मां मुझे गर्म हल्दी दूध पिलाने के लिए दुलारती थी. मना करने पर डांट भी पड़ती थी.

उस दूध में मेवे नहीं होते थे. मीठा बनाने के लिए बस चीनी मिली होती थी. आख़िरी घूंट में मुंह में हल्दी भर जाती थी. हिंदी में जिसे हल्दी दूध कहा जाता है उसे मेरी मां तमिल में पलील मंजल कहती थी.

मसाला या औषधि?

गले में खराश हो या शरीर में बुखार हो, मां तुरंत ही हल्दी दूध पिला देती थी. कई भारतीय इसे तरल रामबाण औषधि मानते हैं.

पश्चिमी देशों ने पिछले दशक में ही हल्दी को खोजा और इसे 'सुपरफ़ूड' बनाने में देर नहीं की.

उन्होंने हल्दी की ताज़ी गांठों को चाय और कॉफी में मिला दिया. उसका शरबत बनाने लगे और तुरंत फ़ायदे के लिए हल्दी का गाढ़ा पेय तैयार कर दिया.

लंदन के बाद सैन फ्रांसिस्को से लेकर मेलबर्न तक सभी शहरों के कैफे और कॉफी दुकानों में मैंने हल्दी वाले पेय देखे हैं.

भारत में हल्दी लंबे समय से रसोई की प्रमुख सामग्रियों में से एक है. यह दो रूपों में इस्तेमाल होती है- गांठों के रूप में और अब हल्दी पाउडर के रूप में भी.

मेरी मसालदानी में सरसों, जीरा और मिर्च पाउडर के साथ हमेशा हल्दी पाउडर मिलता है. मेरी मां भी ऐसे ही मसाले रखती थी और उनसे पहले उनकी मां का भी यही तरीक़ा था.

लंदन में हल्दी-दूध की धूम

पारंपरिक भारतीय रसोई में हल्दी खाने में रंग लाने के लिए इस्तेमाल होती है, ख़ास तौर पर करी और शोरबा बनाने में.

हल्दी की ताज़ी और मुलायम गांठों से हल्दी का अचार भी बनता है, जिसके ऊपर गर्म तेल से छौंक लगाई जाती है. कुछ समुदायों में हल्दी के पत्तों का लिफाफा बनाकर उसमें भोजन पकाया जाता है.

'द फ्लेवर ऑफ़ स्पाइस' की लेखिका मरियम रेशी कहती हैं, "गोवा में मैं अपने घर में हल्दी उगाती हूं ताकि यहां की मशहूर पटोलिओ मिठाई बना सकूं."

पटोलियो बनाने के लिए दरदरे चावल में गुड़ मिलाकर उसे हल्दी के दो पत्तों के बीच रखा जाता है. इसके बाद उसे भाप लगाकर पकाया जाता है जिससे उसमें हल्दी की ख़ास ख़ुशबू आ जाती है.

हल्दी कितनी ज़रूरी?

क्या नए भारतीय व्यंजनों में भी हल्दी की उतनी ही अहमियत है जितना पांरपरिक खाने में है? यह जानने के लिए मैंने मुंबई के मशहूर द बॉम्बे कैंटीन रेस्तरां के एक्जीक्यूटिव शेफ़ थॉमस ज़कारिया से बात की.

ज़कारिया अपने रेस्तरां में सिर्फ़ ताज़ी और स्थानीय सामग्रियों का ही इस्तेमाल करते हैं. वह हल्दी को "कम जायके वाली पृष्ठभूमि सामग्री" कहते हैं.

"मुझे लगता है कि भारत में ज़्यादातर लोग इसे आदत के कारण इस्तेमाल करते हैं, न कि खाने में कोई जायका बढ़ाने के लिए."

ज़कारिया को जब भी मौक़ा मिलता है वह ताज़ी हल्दी को स्टार सामग्री की तरह इस्तेमाल करते हैं, जैसे केरल की फिश करी मीन मोइली बनाने के लिए.

हल्दी और अदरक एक ही परिवार के हैं. भारत के कई राज्यों में इसकी खेती होती है.

फाइनेंसियल एक्सप्रेस के मुताबिक दुनिया भर के कुल हल्दी उत्पादन का 75 फ़ीसदी से अधिक हिस्सा भारत में होता है. भारत दुनिया का सबसे बड़ा हल्दी निर्यातक है और यहां इसकी खपत भी सबसे ज़्यादा है.

दक्षिण भारत के गर्म और आर्द्र मौसम वाले राज्यों- आंध्र प्रदेश और तमिलनाडु में उम्दा क्वालिटी वाली हल्दी का बड़े पैमाने पर उत्पादन होता है.

इसे मई से अगस्त के बीच लगाया जाता है और जनवरी आते-आते फसल तैयार होने लगती है.

शगुन की गांठ

इसमें कोई आश्चर्य नहीं कि तमिलनाडु में जनवरी के मध्य में होने वाली नई फसल के उत्सव पोंगल में हल्दी की जड़ और पत्तों का इस्तेमाल होता है.

दूध उबालने के बर्तन के मुंह पर हल्दी के ताज़े पत्ते और उसकी जड़ बांधी जाती है. इसे धनधान्य का प्रतीक माना जाता है.

भारत में हल्दी रसोई के एक मसाले से कहीं बढ़कर है. भारतीय संस्कृति में इसकी ख़ास जगह है.

कई हिंदू समुदायों में शादी जैसे शुभ अवसरों पर उर्वरता और समृद्धि के प्रतीक के तौर पर हल्दी का उपयोग किया जाता है.

मिसाल के लिए, शादी से पहले हल्दी की रस्म होती है जिसमें परिवार के बड़े बुज़ुर्ग दुल्हन और दूल्हे के चेहरे पर हल्दी का लेप लगाते हैं.

दुल्हन के मंगलसूत्र के धागे को भी हल्दी के घोल में डुबोया जाता है. आज भी शादी सहित तमाम शुभ मौकों पर पहने जाने वाले कपड़ों के किसी कोने में हल्दी पाउडर लगा दिया जाता है.

भारतीय महिलाएं अपने घरेलू फेस पैक में एक चुटकी हल्दी मिलाती हैं. उनका मानना है कि हल्दी से त्वचा साफ़ और चमकदार होती है.

असली भारतीय मसाला

रेशी का कहना है कि भारत के ज़्यादातर मसाले खोजी यात्री और आक्रमणकारी लेकर आए, जैसे मिर्च दक्षिण अमरीका से लाया गया तो जीरा पूर्वी भूमध्य सागर क्षेत्र से आया. मगर हल्दी पूरी तरह भारतीय है.

"यह हमारा मसाला है. जिस तरह से हमने इसे दिल से अपनाया है और इसके औषधीय गुणों पर हमारा जैसा विश्वास है वह हज़ारों साल की अंतरंगता से बनता है."

दस साल पहले एक पुराने दर्द के इलाज के लिए मैं केरल के एक आयुर्वेद अस्तपाल गई थी. उन्होंने हल्दी के लेप, कुछ मालिश और अन्य औषधियों से मेरा इलाज किया था.

तब एक वरिष्ठ वैद्य ने मुझे बताया था कि आयुर्वेद में हल्दी को जलन कम करने वाला माना गया है. इससे दर्द में राहत मिलती है.

कई भारतीय हल्दी से घरेलू उपचार करते हैं, जैसे टखने में मोच आ जाए तो हल्दी का लेप लगा लो या या सर्दी भगानी हो तो हल्दी की गांठ का धुआं सूंघ लो. आयुर्वेद की परंपरागत चिकित्सा प्रणाली में इसका इस्तेमाल सदियों से हो रहा है.

बेंगलुरू के सौक्या होलिस्टिक हेल्थ सेंटर के संस्थापक डॉक्टर आइज़क मथाई का कहना है कि आयुर्वेद मानव शरीर में तीन तरह की ऊर्जा मानता है- वात, पित्त और कफ.

"हल्दी एकमात्र ऐसी औषधि सामग्री है जो इन तीनों तरह के दोषों को ठीक करती है."

यह जलन कम करती है. साथ ही यह भी माना जाता है कि हल्दी में एंटी-ऑक्सीडेंट और एंटी-सेप्टिक गुण होते हैं. हालांकि इन चिकित्सीय गुणों के वैज्ञानिक प्रमाण अभी नहीं मिले हैं.

हल्दी के रासायनिक गुण

हल्दी को उसका चमकीला पीला रंग और इसकी कथित औषधीय ख़ूबियां एक रासायनिक घटक से मिलती हैं. इसका नाम है कर्क्यूमिन.

एक सिद्धांत कहता है कि भारतीय खाना पकाने में जिस तरह तेल में फ्राई किया जाता है उससे कर्क्यूमिन का असर बढ़ जाता है.

पोषण विशेषज्ञ और 'द एवरीडे हेल्दी वेजिटेरियन' की लेखिका नंदिता अय्यर कहती हैं, "कर्क्यूमिन एक तेज़ी से घुलने वाला यौगिक है. वसा के साथ कर्क्यूमिन के मिल जाने से शरीर में उसके अवशोषित होने की संभावना बढ़ जाती है."

अगर यह सही है तो यह मेरे कानों में शहद घुलने जैसा है. इसका मतलब यह है कि मैं बिना किसी अपराधबोध के हल्दी दूध पीने से मना कर सकती हूं और उसकी जगह हल्दी का मसालेदार अचार खा सकती हूं.

उनके लिए जो महंगे कैफे में टर्मरिक लैटे पीने के लिए बड़ी रकम ख़र्च करते हैं, उनको चेत जाना चाहिए कि यह उनकी सभी मर्ज की दवा नहीं है. अच्छा हो कि वे इसे रामबाण औषधि की जगह गर्मागर्म पेय समझकर पिएं.
